Broccoli, Mushroom, and Chicken! A perfect recipe for a Healthy Dinner!

I am not an avid cook but I like to prepare recipes that really are delicious and don’t take much of your time. Since I moved into blogging, I could not find much time to prepare exquisite dinners and all day’s work made it hard for me to venture into the kitchen and think. Hence, to find a respite to that I have been coming up with recipes that don’t need much of your time and will surely cover the entire spectrum of being healthy and delicious. Broccoli, Mushroom, and Chicken combination can be easily prepared with ingredients conveniently available at your home and you would not need to rush to the grocery store last minute. This recipe serves two.

INGREDIENTS

  • 01 bunch of Broccoli that has about 02-03 stalks
  • 250 gms mushrooms (white button mushrooms)
  • 500 gms chicken cubes
  • 01 tbsp cornflour (optional)
  • 02 tbsp chilli sauce
  • 01 tbsp soya sauce (dark)
  • 04 garlic cloves (chopped)
  • 01 1/2 tsp sea salt
  • 01 tbsp ground pepper
  • 01 tsp salt (for blanching broccoli)
  • 01 birds eye chilli (chopped) or 01 tsp of chilli flakes
  • Cooking oil/olive oil (preferably)

STEP 1- First, let’s start with the mise en place, we would need a saucepan with hot boiling water and add 01 tsp of salt….add broccoli florets for blanching. Do not leave the broccoli for more than 05-06 minutes (you would see the color change for reference).

STEP 2- Remove the blanched broccoli and place under cold water it would stop the broccoli from cooking further.

STEP 3- Let us move to the other ingredients. Take a non-stick pan and add 01 tbsp of olive oil …olive oil burns fast hence it’s best to heat the pan first and then add olive oil and then add sliced mushrooms. Cook for the time mushrooms turn brown and would release water.

STEP 4- Use the same non-stick pan preferably and add about 01 tbsp of olive oil with chopped garlic cloves and chili flakes or chopped chili….let the flavor add in the oil. You would love the aroma and then we add our vegetables and saute. Either you can saute the chicken cubes before or one can add them to the vegetables. Please keep the flame on medium throughout and cover the pan.

STEP 5- After about 10 minutes (once the chicken is cooked) add chili / hot sauce and dark soya sauce. Mix lightly without breaking the florets. Please add sea salt and ground pepper for flavor and saute for a bit.

OPTIONAL STEP- Once well cooked and florets crunchy take a small bowl with 02 tbsp water and add cornflour and mix well. Add this mixture to the pan and mix.

Cover the lid for about five minutes and there we go! It’s ready!

Serve with the bread of your choice and enjoy a entire bowl full of health and and flavours!
