Blueberry Teacakes Recipe…that always takes me back to my childhood!

Whether on a diet or not, snacking during the day for me is a must! My Mother prepared exquisite healthy and scrumptious recipes and took delight in them. I love desserts and this recipe is straight from my Mother’s kitchen and a bit improvised by me…….

Let’s begin with the recipe;

Wet Ingredients

  • Egg- 01 Large
  • Sugar – 1/2 cup or 3/4 cup (Finely granulated / Demerara sugar / Caster Sugar)- In case not available, regular home sugar can be used too.
  • Milk- Low fat (preferably) – 01 cup
  • Vanilla Extract- 01 tsp.
  • Oil (Vegetable oil/ avocado oil / unsalted butter) – 05 tbsp.
  • Unsalted butter- For greasing the pan.
  • Blueberries (Frozen or fresh)- 300 gms (cleaned and dried)

Dry Ingredients

  • All-purpose flour – 2 cups
  • Baking Powder – 01 tbsp.
  • Cinnamon powder – 01 tbsp. or as per preference (Instead of Cinnamon grated lemon zest can be used too).
  • Salt – 1/2 tsp
  • Icing sugar- for sprinkling once the tea cakes are baked.

Preparation

Step 01- Preheat the oven to 180 o C or 350 o F, Grease the baking pan with unsalted butter and keep aside.

Step 02 – Take a large deep bowl preferably, Add 01 large egg and the sugar. Whisk well. Keep whisking until the sugar dissolves well and the color changes to creamy white. To this, add the oil and whisk again. Please make sure that the ingredients at this point are mixed well.

Step 03 – Once the mixture is smooth, add milk and whisk. At the end add the vanilla extract and then Let us move on to the dry mixture.

Step 04 – Take a smaller bowl, add the flour, salt, baking powder, cinnamon (or the lemon zest). Mix this lightly and then add this mixture to the wet ingredients bowl slowly while whisking continuously.

Step 05- Mix the ingredients well till no lumps are seen, you would notice that the batter is slightly dry and hard to mix, let it stay that way since we would need an uneven batter so that the blueberries don’t sink to the bottom of the pan. If you feel that the batter is too dry, add a little melted unsalted butter to the mixture.

Step 06- Add the blueberries and mix and then pour the batter into the baking dish. Spread the batter gently, do not smoothen it. Let a few blueberries break however, they would not sink down.

Step 07- Place the dish in the oven for 45 minutes, however, I recommend checking the cake once after 30 minutes. Remove the baking dish once the crust turns slightly brown. The blueberries take a little while to bake so please check with the toothpick before removing the baking dish.

Step 08- There! our yummy Teacakes are ready to be served. Sprinkle some icing sugar on the top and plate the Teacakes with a few fresh blueberries and serve!
