Roast Chicken! The Simple and Easy way!
I am sure this recipe may match many of your recipes, but I had to share this since it is a big hit in my home! I have tried to be as creative as possible with it but the simpler the better. This recipe can be served with veggies of your choice however, I serve it with zucchini and lots of peppers.
Ingredients (Serves 4)
Marination (Chicken)
- Whole chicken with skin – 900 – 1000gms (chicken with legs tied is better or you could do it yourself)
- Fresh Herbs of your choice (Parsley, Basil, Marjoram,etc) – However, i chose these three only.
- Olive oil (Extra virgin) – 02 tbsp
- Sea salt- as per taste
- Pepper (optional)
- Chili flakes – 01 tsp
- Salted Butter / garlic butter- 200gms
- 01 Lemon / Lime (cut in half)
Marination (Veggies)
- Vegetables of your choice diced
- Olive oil (Extra virgin) -01 tbsp
- Sea salt- as per taste
Let us begin preparing;
- Step1- Place the Whole chicken in the oven proof dish for marination, lets chop the herbs together nicely and finely, add olive oil, sea salt, chili flakes ,pepper to the herbs and mix well. Take this mix and properly rub the chicken with it. Cover the chicken on top as well as inside the skin. Once the herbs marination is over, cut the butter in half and place 100gms each inside the skin on breast side of the chicken. Place half sliced lime / Lemon inside the chicken to enhance the flavors.
- Step 2- Slice the leg during the marination so that the mix is absorbed well and the leg piece cooks as well as the breast piece.
- Lets keep this aside for about 30 minutes to 01 hour.
- Meanwhile pre- heat the oven at 220oC or 428oF
- Step 3- Combine the veggies with the marination ingredients and add the same to your chicken dish.
- Step 4- Let us place the chicken inside the oven for 30 minutes until the skin browns well. You can increase the temperature at the end as per your preference.
- Serve this delicious roast chicken and veggies with the bread of your choice and enjoy!
